This 100-Liter field blend of three agaves (Bicuixe, Madrecuixe and Espadin) and one Desert Spoon (Cucharillo) is the first time master distiller Atenogenes Garcia and his son Jose have incorporated wild-harvested Cucharillo (Dasylinon Serratifolium) in their productions. All four species were harvested on the same plot of land in San Isidro Guishe, Oaxaca, and then roasted together in and underground oven for six days with guamuche and mesquite firewood. Post-roast, the agaves were crushed by a large two-ton tahona that was pulled by an old 1960’s tractor. The crushed fibers were then allowed to ferment with wild yeasts and calcium-rich well water in two pine tanks. After fementation was completed, the mash was double-distilled in two copper alembic stills at Atenogenes palenque, “El Lbrador,” in San Isidro Guishe, Oaxaca. The resulting distillate was adjusted by Maestro Atenogenes to its current ABV with heads and tails.
