Product Description

This small, Chicago-only batch of wild agaves Jabali & Tobalá was distilled by Maestro Palenquero Alberto Martinez and his family at their palenque, “La Escondida,” in Santa Catarina Albarradas, Oaxaca. With the help of his son-in-law, Reynaldo, Alberto hiked up to 8,000 feet above sea level to wild-harvest 96 Tobalá (A. Potatorum) and 221 Jabali (A. Convallis) piñas. After nearly a week of harvesting, Alberto roasted the two species of agaves together in an underground oven for three days with encino oak. The cooked agaves were then mashed by hand with wooden mallets and transferred to cement tanks to ferment. Ground “tepehuaje” bark was added to the tanks to supplement and stabilize the fermentation, a local tradition born out of necessity due to the cold temperatures experienced in Santa Catarina, which sits over 6,000 feet above sea level. After just three days of fermentation, the mash was double distilled in clay pot stills. 130 Liters produced. Adjusted with heads, hearts and tail by Alberto and family.
