Vineyard Notes: Pedro Ximenez from the Limari Valley (200 miles north of Santiago) is typically used for Pisco production but winemakers Cedric Nicolle and Diego Edwards found a particular 1-hectare parcel which they thought had potential for making high quality wine because of it’s calcareous soil and proximity to the coast. The vineyard is sustainably grown and was planted on pergolas in 1999.
Winemaking Notes: Grapes for this dry, still Pedro Ximenez were de-stemmed. Cold maceration was followed by fermentation and aging in stainless steel
