Paw paws are the largest indigenous fruit, and are surprisingly tropical in taste and appearance. In fact, they are often referred to as the Indiana banana. Paw paws taste like a cross between a banana and mango, and seem to belong more to sandy Caribbean soils than to Midwestern prairies.
Through a process of maceration and distillation, these native fruits were turned into a liqueur to be enjoyed year round.
