Winemaking Notes: The Chenin Blanc ferments and ages in neutral oak and then finishes second fermentation in bottle. A pied de cuve and grape must are added to start the secondary fermentation. The wine is lightly filtered, and about 25mg of sulfites are added (a little after primary fermentation and a little at bottling).
Tasting Notes: This is a fresh and lovely sparkling Vouvray with wonderful minerality along with quince, pear and hint of smoke.
